Maine Restaurant Week Signature Event


sigevent1We had an incredible time at the Maine Restaurant Week Signature Event this year – and we’d like to thank you all for naming Opus Ten People’s Choice Winner! It means so much to us to have the support of our incredible community.

This year’s event was a food and drink pairing competition. We prepared a Mexican Chocolate Martini paired with a pulled pork slider with house pickles on a beignet.

To make the martini at home, here’s our recipe:

Mexican Chocolate Martini
1 1/2 oz Double Cross Vodka
1 oz Godiva chocolate liqueur
1/2 oz chocolate sauce
1/2 oz spicy simple syrup (with fresh jalapeno and cinnamon stick)
Sprinkled with a mixture of cayenne pepper, ground cinnamon, and chili powder

David’s Recipe for Scallops in White Chocolate


Just in time for Valentine’s Day, here’s David’s recipe for scallops in white chocolate. See how to prepare them step-by-step with this video of David’s recent visit to the 207 kitchen.

Scallops in White chocolate

Yield: 2 dinner portions


  • 6 0r 8 very large sea scallops – they should be about 1 ½ oz each
  • Salt- kosher
  • Black pepper – fresh cracked
  • White truffle oil
  • 1 T butter
  • 1 t Garlic- Minced fresh
  • 1 T Shallots – thinly sliced
  • 1 T Leeks – green only – thinly sliced
  • 4 oz Vouvray wine – demi sec or fairly sweet Riesling
  • 6 oz Heavy cream
  • Shaved white chocolate
  • 2 T Italian parsley, chiffonade

David on 207 in preparation for James Beard Dinner

David Turin is a chef you’ve seen many times in the 207 kitchen. He’s now preparing, though, for what may be the biggest night of his professional life.

On Oct. 21st, he’ll be cooking dinner for connoisseurs of fine food at the James Beard House in New York City.

The Beard House is the former home of the great writer and chef, James Beard. And making dinner there is kind of like being asked to drop by Fenway Park to demonstrate how to play baseball.

Turin has four restaurants in Maine, including David’s Opus 10 in Portland.
