Pumpkin Cheesecake with Cinnamon Ginger Crust

 
 

Yield: 10" Spring-form, 16 slices

CRUST

 
 

Ingredients:

1 ½ C Graham cracker crumbs
2 t Powdered ginger
4 T Sugar
1½ oz Melted Butter

Method of Preparation:

  1. Combine ingredients in mixing bowl
  2. Press into 10” spring-form pan to shape crust
  3. Place pan in freezer while making cheesecake

Ingredients:

1 ¾ lb Cream cheese—soft at room temperature
5 Eggs
2 ½ C Sugar
1 T Vanilla
1 t Salt
2 C Pumpkin puree
1 T Cinnamon
1 t Nutmeg
½ t Ground clove
1 t. Ground ginger
1 ½ C Sour cream

Method of Preparation:

  1. Process cream cheese until smooth
  2. Add all remaining ingredients, except sour cream, process until smooth
  3. Fold in sour cream—place in lined 10” spring-form pan
  4. Bake at 300° for 2.5 hours or until set
